Popular LA chef launches TabeTomo in the East Village.

A long-awaited addition to New York’s Japanese dining scene, TabeTomo replaces traditional ramen with tsukemen, which consists of a separate serving of super chewy noodles and a rich, thicker-than-thick broth for dipping. Achieving a compelling contrast to your senses, tsukemen noodles are served at room temperature (this makes them extra firm and springy), while the broth promises to be piping hot (a heated stone gets thrown in mid-way your meal).

The Spot:

This style of dining is no stranger to connoisseurs of Japanese cuisine, or the countless Californians standing in line at Tokyo-born Tsujita. That’s where chef Tomotsugu Kubo has helped bring the ramen hotspot to LA, where the wait is as painful as the city’s traffic, and where the West Coast was winning from New York’s underrepresented tsukemen scene – until now.

The Food:

TabeTomo serves tonkotsu (pork) broth, which is slowly simmered for over 60 hours to make it extra rich and comforting. As it’s more about the dipping and textures, the menu is relatively short and simple. Expect add-ons such as braised pork, soft-boiled eggs, bamboo shoots and nori seaweed, as well as small sides like crispy chicken skin and donburi rice bowls.

The Drinks:

Drinks are certainly no afterthought. With help from Jessica Joly – aka Miss Sake USA – TabeTomo offers a carefully chosen list of sakes that complement your ramen.

The Damage:

Ramen is priced at $13-$17, while small sides range between $5 and $12.

In a Nutshell:

New York is blessed with standout ramen restaurants from some of the world’s most renowned chefs, but surpisingly, tsukemen is tricky to find. TabeTomo, brace yourself for long lines of difficult-to-please ramen lovers.
