Maison Premiere in Williamsburg is well known for its incredible cocktails and amazing oyster happy hour. But popularity like that makes for serious crowding so the owners have opened another location to tempt us with – Sauvage.

After winning the James Beard Foundation award for Outstanding Bar Program with Maison Premiere, the launch of a second site has been highly anticipated and this time, it’s a restaurant. For now, Sauvage is dinner only but will soon be introducing an all day menu with breakfast and lunch service, as well as a takeout window for coffee and pastries. The current menu, helmed by chef, Lisa Giffen, leans towards the French side of things with items like Leek Terrine (with clams and pink peppercorn), Pig Head Confit (for two, with yellow eyed peas and stone fruit) and Stuffed Arctic Char (for two, with absinthe mignonette and beef-fat potatoes). Dessert continues to be French with items like the Gateau Saint Honore (with candied hazelnuts, caramel and sabayon) in addition to special dessert cocktails like the Stinger (with creme de menthe, gourd and de chadeville).

Though this is less of a bar than Maison Premiere, alcoholic beverages are still a focal point with over 200 different types of spirits on the menu to play with and boasting six different types of chiselled ice to pour them over. Bar director, Will Elliott, has crafted a menu containing signature cocktails like the Riding Tigers (with Armagnac, Pineau de Charente and peach Capurso),  a Pastis Cobbler (with Argala Pastis, cherry, Quina and chamomile) and a Slow Moon’s Rose (with Reisetbauer Sloe, raspberry, lime, Edinburgh gin and bitters).

Sauvage, just off McCarren Park, takes inspiration from the Art Nouveau movement and features a French walnut bar, hand-blown glass chandeliers, a variety of plants and is reminiscent of a European brasserie.
