Middle Eastern ice cream shop Republic of Booza arrives in Williamsburg.

Republic of Booza is unlike any other ice cream shop in New York, specializing in booza – the original ice cream that was developed over five hundred years ago in the Middle East. Booza is the first frozen dairy-based dessert, from which American ice creams like Van Leeuwen and Oddfellows Ice Cream Company have evolved. Made with a mixture of sahlab (ground orchid root) and mastic (a resin), booza ice cream boasts an elastic and chewy consistency, while still being smooth and creamy.

The Spot:

Paying homage to the history of this long-lost ice cream, Republica of Booza is fitted with freezer drums and wooden pestles throughout the space – the necessary tools to create booza ice cream. To achieve the unique consistency, the mixture is added to milk in a freezer drum, before pounding it with long wooden pestles and stretching it by hand. Even if you’re not into ice cream, watching the founders (Michael Sadler, Tamer Rabbani, Jilbert El-Zmetr, and Mohammed Makki) create the dessert is pretty mesmerizing.

The Food:

While booza has only been served in one traditional flavor in the past (Qashta or ‘candied cream’), Republic of Booza is the first booza shop to offer a full-line up of flavors. Giving the ancient ice cream a modern spin, flavors include rocky road, salted caramel and honeycomb toffee, as well as more experimental flavors such as cantaloupe-feta sorbet, mint tahini chip and lemongrass hibiscus. We weren’t kidding when we said Republic of Booza is unlike any other ice cream shop in New York.

The Drinks:

There’s a Bloody Mary sorbet ice cream on the menu.

While New York is jam-packed with American-style ice cream shops, the original booza is surprisingly hard to find. Now, Republic of Booza brings the Middle Eastern ice cream to the city, as the world’s first modern booza shop with a variety of different flavors.
