A famous pizza-maker from Rome opens a Roman pizzeria on the Upper East Side – PQR.

Angelo Iezzi is known for taking a different approach to the dough-making process, combining long fermentation with high hydration to ensure the pizza is easy to digest. Back in Rome, he runs the award-winning pizzeria Angelo e Simonetta, while also being the president of the Associazione Pizzerie Italiane – he’s basically the pizza president.

The Spot:

Together with Fabio Casella – owner of San Matteo – Izzi brings pizza al taglio to New York at PQR – short for Pizza Quadrata Romana. Quick Italian lesson for you: “al taglio” means by the piece; “Pizza Quadrata Romana” means Roman square pizza – well, that wasn’t difficult was it. The pizzas are cut into squares, boasting a crispy exterior while being airy and soft on the inside. Although the style of pizza contrasts the New York slice, the concept at PQR is very much the same. The no-frills spot has a counter up front – ideal to grab a slice on the go – with a few stools and a small dining room in the back.

The Food:

Just as important as the perfect-pizza crust are the toppings, of course. Besides a simple margherita, toppings include grapes, goat cheese, and pancetta. A signature slice is already highly anticipated, with Amatriciana (a tomato, cheese and bacon sauce traditionally used for pasta), porchetta stuffing and potatoes on top.

The Drinks:

A wine-and-beer license is expected to arrive soon.

The Damage:

The squared-shaped pizza slices vary between $4.50 and $10.
