The Noodle Bar at Brushstroke

The Noodle Bar at Brushstroke, a collaboration between Japanese chefs Isao Yamada & Kyoji Noda, is a speakeasy-style spot, serving up traditional tonkotsu ramen.

The Noodle Bar now lives in the section of Brushstroke – which opened in 2011 from French chef David Bouley – that was once housing Eiji Ichimura’s omakase.

The Spot:

You would never know Noodle Bar sat on the corner of Hudson and Duane Streets (their Instagram bio even boasts that it has yet to be found). The 14-seat spot can be accessed by walking behind a glass and black metal partition near the south end of the restaurant – they really don’t make it easy on you! The space itself is decorated with 25,000 paperback books and dioramas from artist Daichi Sato.

The Food: 

Chefs Isao Yamada and Kyoji Noda are Japan natives from Fukuoka – where tonkotsu ramen originated. Guests can expect dishes like the Brushstroke Tonkotsu Ramen, a creamy pork broth with egg and mushrooms, Duck Miso Ramen, Sweet Corn Butter Soy Sauce Ramen, and Udon dishes. Guests can also find two Gyoza options – Wagyu Garlic and Scallop Mushroom.

The Drink:

You’ll find traditional sake here, as well as some original cocktails – it is a speakeasy after all.

Noodle Bar does not take reservations – walk-ins only! Head out early to search for the speakeasy-style spot and enjoy some traditional tonkotsu ramen in a space that your friends probably don’t even know about.
