It seems that the team from the famous Copenhagen restaurant, Noma, have got a bit of a thing for Williamsburg right now. Claus Meyer has since come into the area and opened Meyers Bageri, the bakery and Norman, the hit brunch, lunch and co-working space with his friend Frederik Bersilius – also a hit making chef and also, with a restaurant in Williamsburg – Aska. Now, chef Mads Refslund who was responsible for the kitchens at Acme is teaming up with Meyer to host a pop-up restaurant inside his bakery, Meyers Bageri – Knightshift.

The Spot:

Starting this week, Knightshift will be open each week from just Wednesday-Friday until the end of the year. Meyers and Refslund are long time friends, having founded Noma together and he is seeing this pop-up as a great opportunity to get to know the area and introduce himself to locals. It’s been heard that he’s planning to open an unnamed spot in the former Vice offices in North Williamsburg at some point.

The Food:

Refslund is hosting guests with an à la carte menu divided into three sections: ice, from the oven and sweets. Some seasonal dishes to look out for include raw chestnuts with uni, sweet shrimp with squash and bronze fennel, and sweet-and-sour fig tart.

In A Nutshell:

The spot has just 14 seats and they don’t take reservations so, word to the wise, get there early to get a seat. These are some of the best chefs in the world and you owe yourself an opportunity to see them in a laid back and unpretentious manner. Your future self and bank account will thank you.
