Brasserie and bakery KarVér has opened a new location in Brooklyn.

They’ve recently appointed a new culinary director, James Beard Award-winning Chef François Payard, and will serve European-inspired food using New York ingredients. They’ll join other cafés in the area, including nearby Ovenly, and another new location is opening in Chelsea later this month.

The Spot:

Every KarVér brasserie is centred around an open-action kitchen, and the new 2000ft location has contemporary décor with Old World accents from local designer Zaza Djidjavadze. It uses the same warm color scheme, with bronzes and golds throughout, with wooden accents in the interior.

The Food:

The brasserie menu, overseen by Executive Chef Dipak Chudasama, features many classic French dishes, including moules frites, chicken paillard and escargots à la Bourguignonne, as well as a new variation on pissaladière (a French-style pizza made with thicker dough).

The bakery café menu serves create-your-own sandwiches, with bread from a Bongard Paneotrade machine (it bakes fresh bread every ten minutes!). Bread options include calamato olive, garlic rosemary, olive oil sundried tomato, raisin, orange zest and walnut, and pretzel-style dipped in lye. You can read that again if you want. It says PRETZEL-STYLE.

Fillings include roasted zucchini with eggplant and hummus, smoked salmon and cucumber, seared chicken tomatoes, ham and brie and buffalo mozzarella. There is also a range of Viennoiserie – you can find croissants, éclairs, and fruit tarts. Or go back and read that bit about the pretzel sandwiches again.

The Drinks:

In the café, the baristas serve ristretto and espressos alongside nitro cold brew and on-tap kombucha. The restaurant drinks menu features seasonal signature cocktails, craft beers and spirits alongside a selection of local and Old World wines.

The Damage:

Create-your-own sandwiches are $9.50, and pastries from $3.25–$5. In the restaurant, appetizers are $10–$16 and main plates $13–$22.

We like KarVér’s dual focus of European flavors and local ingredients, and we’re pleased to see the well-thought-out menus carrying on in their new locations. Also – last time; we swear – PRETZEL SANDWICHES.
