Due West

Due West is a new cocktail and wine bar, open now in the heart of the West Village.

It will offer cocktails and a wine and beer program along with large and small plates.

The Spot:

Located in the former Diablo Royale space, the interior has been designed by the North Fork Design Co. The bar is made of rich walnut wood, with a (fancy-sounding) gold-veined Calcutta marble base and custom shelving made of blackened steel. The central table is lit by a molten glass chandelier and surrounded by smaller marble tables, leather and velvet banquettes and black and brass stools. In partnership with ACA Galleries, they will also be showcasing a rotating selection of art pieces. Did we say it sounded fancy?

The Food:

Chef Adabis Castro, formerly of Atrium Dumbo and Le Bilboquet, has designed his menu to complement the drinks. There’s a raw bar, featuring oysters and scallops, and bar snacks like hot crab dip with cheddar cheese and smoked trout roe (say it again: Hot. Crab. Dip), Yukon potato bread and chickpea fritters, and the small plates include fried cauliflower, octopus, and beef tartare.

Larger plates include a dry-aged burger and sharing dishes of chicken with foie gras or a whole fluke with butter and lemon. There’s dessert, too – choose between a chocolate mousse and a crispy milk crumble.

The Drinks:

Camilo Viafara is in charge of the wine and beer here, and his menu focuses on domestic and small producers, with wine varietals from around the country, and a champagne list. The beer list includes crafts, drafts and cans like Black Duck Porter, as well as a house lager.

Cocktails are a big deal at Due West, with a list curated by Jess Goldfarb and containing seasonal offerings like the Old Diablo, with tequila, lager, grenadine, lime and a charred citrus salt rim, or draft cocktails such as the Green Witch, with gin, saffron, grapefruit and rosemary. There’s a super exciting Build-Your-Own Old Fashioned, where you can choose from mix-and-match spirits (Rye Whiskey, Mezcal, or American Brandy), sugar (cane, smoked, or maple), and bitters (aromatic, orchard, or chai) – we did some quick math and we’re pretty sure that makes 27 combinations, which sounds like a great night out to us.

There are also bottled cocktails, and sharing options including our favourite – the Flight of the Conchords, which comes in a punch bowl and is made with Absolut Elyx vodka, sparkling wine, concord grapes and rooibos tea.

In a Nutshell:

We’re pretty excited about this – the cocktail list in particular is very varied, and this sounds like a great spot for Saturday drinks or a date night. We’ve got 27 Old Fashions to try, after all. We really hope that math is right.
