Chao Chao is a new restaurant in East Side, Manhattan serving Vietnamese food. 

The restaurant is the brainchild of New York native, executive chef and owner, Stephan Brezinsky who left a successful career in Hollywood as a VFX artist to work in the food industry.

Since opening a popular Farmer’s Market in L.A and then working in various positions at New York establishments like Il Mulino, The Third Man and Pok Pok NY, Chef Brezinsky has decided to open his own establishment to serve friends, both old and new, as if he were serving it in his own home.

Chao Chao stays true to Vietnamese cuisine in its dishes that are light, with colourful hues, textures and flavors and a good measure of heat. Appetizers like chicken wings glazed in caramel, fish sauce and five spice or battered taro tossed in wasabi start off the menu. There’s also a range of salads and raw dishes like cauliflower three ways and spicy raw beef tartare  (mixed with Sriracha, crispy shallots and crushed peanuts).

Heartier options range from dishes ‘From the Wok’, ‘From the Fields’ and grilled dishes. Choose from ‘Thit Kho,’ a braised pork shoulder and belly topped with a pickled soy egg, and ‘Cà ri bò,’ beef cheeks marinated in shrimp paste, slow cooked in lemongrass coconut milk curry. There are also large-format sharing dishes like a Vietnamese fish stew for three served with sticky rice and a half roasted duck for two with all the trimmings.

Chao Chao’s cocktail menu is created by renowned mixologist Tom Richter (formerly of The John Dory Oyster Bar, and Milk and Honey). Each cocktail is created specially with wines, beers and sake, and fresh ingredients from the kitchen and garden, to imbibe on its own or to pair with the food.

The 65-seat restaurant features white-washed brick walls adorned with green plants and glass terrariums and granite dining tables and dark wooden chairs fill the space. An open chef’s kitchen is situated towards the back of the restaurant where guests can get a good look of the action while they dine and an outdoor garden houses the kitchen’s fresh herbs.
