A new fast-casual concept, Brine Chicken, arrives in Chelsea.

Brought to you by Dan Mezzalingua with executive chef Joe LoNigro (founding chef partner of Otto’s Tacos), Brine Chicken is a self-service restaurant with a focus on – wait for it – chicken. But not just any chicken; the antibiotic-free birds are brined in a sauce for 24 hours, bathed in a blackened chili honey garlic sauce, and cooked over fire for a crispy finish.

The Spot:

Brine Chicken is your typical fast-casual spot, featuring a clean, minimalistic design with white tiles and modern furnishings. However, their ordering system stands out from the crowd, offering high-tech TRAY Kiosks with screens displaying each meal for you to order. Don’t worry, it’s designed to be quick and easy.

The Food:

The menu includes three varieties of chicken, including their signature brined chicken thigh, spatchcock half chicken, and a grilled sandwich with pulled chicken. The fun starts at the sauce bar, where you can customize your meal with options such as charred jalapeños, honey mustard or buttermilk red (a milder version of their chili and garlic sauce). Complementing the main attraction, Brine Chicken serves healthy vegetable-focused sides likecoconut rice and peas, pan-roasted carrots (glazed in lemon), and roasted beets with goat cheese tzatziki.

The Drinks:

Brine Chicken offers sodas, wine and beer, including Brooklyn lager and Sauvignon Blanc.

Dishes vary between $9 and $15.
