Bellwether is a New American eatery, now open in Queens – Long Island City.

Brought to you by owner Matthew McCormick and co-owner/Chef Preston Madson – formerly of Barbuto, Jams and Freemans – Bellwether focuses on local and sustainably sourced ingredients.

The Spot:

Creating a relaxing atmosphere, the bright 60-seat dining room features whitewashed brick walls, a white wood pallet ceiling and neutral elements throughout the space – all designed by McCormick and Elizabeth Hardwick of Giants in the Dirt. Occasionally, you’ll find a pop of color, with succulents making an appearance on simple shelves, as well as a moss wall behind the long bar.

The Food:

Taking inspiration from Mediterranean, North African and Asian cuisine, Chef Madson’s menu is diverse, yet sustainability remains the focus in all his dishes. To start, there are Parker House Rolls with sea salt and goats milk butter, or black bass crudo with surrano peppers, celery and lemon. Entrees include seared Trumpet Royale mushrooms (with leeks, parsley, and sherry vinegar), and a signature Bellwether Patty Melt. If you don’t mind sharing, there’s braised lamb neck for two with butter bean hummus, spicy house pickles and pistachio flatbread. Side dishes revolve around vegetables such as heirloom carrots with green tahini, carrot tops and lime.

The Drinks:

Complimenting the seasonal dishes, head bartender Diego Guzman Fernandez frequently updates the wine list and his signature cocktails. At the moment, standouts include the Bellwether Bees with Barr Hill Gin, Bellwether honey, vanilla bean and lemon, and the Wombat with rye, smoked maple syrup, ginger and lemon.

The Damage:

Starters cost $12-20, entrees are $16-$45, and side dishes are $9. Most cocktails cost around $12.

With direct views of the Empire State Building and an ever-changing menu, Bellwether will be more than just a neighborhood restaurant, attracting New Yorkers across all boroughs.
