The chef at newly opened spot, Baar Baar, was named Chef of the Year 2016 by Times Food Guide and has a career that has taken him to London, India, Dubai and San Francisco. Now, it’s taking Sujan Sarkar to New York where he plans to serve his modern interpretation of Indian cuisine to New Yorkers at his new restaurant, Baar Baar, which means, “again, again”.

New York’s Indian food scene is still one that’s yet to be bursting with fabulous options to choose from although that’s not to say that there haven’t been some incredible additions to the scene in recent months. There’s the winner of Top Chef Masters, Floyd Cardoz’s restaurant, Paowalla. There’s the former Babu Ji chef, Abishek Sharma, who opened his own spot, Badshah. And of course, the reopening of Babu Ji with a slightly bigger space and improved menu in Union Square. But there is always room for more and, at Baar Baar, Sarkar is offering a new approach – a more, artistic approach – to his cooking.

The Spot:

The new restaurant is housed in the former L’Apicio space and offers a bright and welcoming space to diners with walls that are splashed with bright colors and a mural of an Indian woman covered in jewelry decorates another wall.

The Food:

His menu is a mixture of traditional with molecular gastronomy flourishes. He uses sous-vide cooking techniques, foams and gels make an appearance too but they are not overly featured or pretentious in their use. Expect large platters of traditional dishes like tandoori mushrooms, Kashmiri-style lamb ribs and butter chicken as well as more innovative dishes like potato and bone-marry kulcha and oysters with guava, chile granita with lemon foam.
