A brand new fast-casual spot has just opened near Bryant Park that is already forming lunch time queues out the door – Two Forks. Unlike most healthy fast-casual eateries in New York, this place puts an emphasis on slow cooking and seasonal produce but don’t worry, they do all the waiting around and cooking for you so it’s ready and waiting for you at lunch time – their mantra is ‘cooked slow and pulled fast.’

The Spot:

Two Forks is the brainchild of chef Michael Kaplan and Dave Oz (of Bathtub Gin). This is their first fast-casual venture and it looks like it is set to be the first of many. The eatery pairs all natural ingredients and slow cooked meats with seasonal slaws and globally inspired sauces all with a focus on clean eating. Their approach to food is simple: clean, responsible and always fresh. You could liken Two Forks to spots like Sweetgreen and while you might be on track, you’d be doing the food at this spot a disservice.

 

The Food:

The menu is focused on bowls or buns (sandwiches) that change seasonally. Choose a bun or bowl and then choose from a selection of pulled meats including Amish chicken, Colorado Lamb or Niman Ranch grass fed beef before opting for a range of slaws and sauces to finish. A veggie option of organic spaghetti squash is also available for non-meat-eaters.

If you’re not into customizing your own food, Two Forks have very kindly put together some signature bowls to choose from, including the Hot Chick (with pulled chicken, harissa buffalo sauce, carrot, celery root, parsnip and blue cheese slaw) and Squash Goals (with pulled spaghetti squash, tzatzki sauce, carrot, apple, cranberry and goat cheese slaw) amongst others.

The Drinks:

There are also a range of fresh juices available.

The Damage:

Buns start from $7.99 to $9.99 for bowls.

In a nutshell:

Two Forks offers a health-conscious approach to quick-service dining. With everything prepared gently at low-temperatures in a moisture-induced environment, there is highly reduced exposure to carcinogenic causing elements. Come for lunch early as it’s already a popular spot, but the queues move quickly thanks to their stellar production line.

“At Two Forks, we love the pairing of tender, juicy meats with crisp, refreshing slaws,” said Kaplan. “The slow coking really allows the natural flavor of the products to shine.”
