There’s no shortage of great new dinner places in the West Village (and we’ve covered some of them, like Chumley’s and Italienne), but Boucherie, which is a classic French diner-cum-contemporary New York resto, is still one to keep an eye on. Led by Chef Jerome Dihui (formerly of Pastis), Boucherie showcases what happens when you take homespun French recipes and give them a New York flair. 

Given that ‘boucherie’ translates to ‘butcher’ in English, it’s not surprising that the menu here is all about the meats. Dinner here is like a parade of the best of classic French cuisine: the options include a home-style cassoulet and a choucroute garnie, a tried-and-true Alsace soul food that combines tangy choucroute with savory sausage.  

For the real carnivores, there’s the Butcher Bar, which is exactly what it sounds like: a cavernous open space dedicated to one thing and one thing only – the transformation of meat. An open kitchen with a wood-fired grill cranks out works of art like Côtes de Chevreuil – herb-crusted venison – and dry-aged filet mignon for two.  

A classic cocktail list rounds out Boucherie‘s menu, and staying true to its French theme, absinthe is the word of the day here, with many concoctions featuring this enigmatic liquor. 

Although Boucherie is one of the largest restaurants in the West Village – over 320 seats! – the interior is tasteful and cozy, with the main dining room influenced by 19th– and 20th-century Art Nouveau décor (Napoleon would feel right at home here).

For diners wanting a little more privacy, the mezzanine offers a quieter, more refined vibe. A private banquet room, on the topmost floor, offers views of the bustling main dining room below and is perfect for those West Village-style genteel get-togethers.
